Gabe’s Secret Arroz con Gandules Recipe

2 tbsp of Sofrito
1/4 cup Spanish olives with pimento
1 – 1.5 packet SazĂłn with annatto
Adobo to taste
3-4 cups of Chicken or pork stock
1 tbsp of tomato paste
1/2 can of coconut milk
2 cans of Gandules (pigeon peas)
4 cup of rice
Olive oil to taste
Directions
1. Add oil, sofrito, olives and tomato paste to pot and heat until sizzling
2. Add rice and mix well
3. Add about a half can of coconut milk
4. Add liquid from peas (if using canned)
5. Top off with stock
6. Add adobo to taste
7. Add sazĂłn and stir well
8. Cook as you would normally cook rice until liquid is absorbed
9. When finished cooking add a good drizzle of olive oil to pot and mix well to enhance flavor and fluff up the rice.

NOTE: As a general rule for making rice you should use equal parts rice and liquid. The coconut milk, water from peas and stock combined count as your liquids. Ignore the peas in this calculation.
